PRAWN JALFRAZIE


Serves 6  
Preparation Time 1 hour
Ingredients

500 grams cleaned and de-veined prawns
1 teaspoon cumin seeds
2 green chillies slit             
1 teaspoon garlic paste
1 teaspoon ginger paste             
3 tomatoes chopped
2 onions sliced finely  
1 teaspoon spice powder or garam masala powder
1 teaspoon pepper powder 
3 tablespoons oil
Salt to taste

Heat oil in a suitable pan and add the cumin seeds. When they begin to splutter add the onions and fry till golden brown. Add the prawns and stir fry for a few minutes till they change colour. Now add all the other ingredients and a little water and stir well. Simmer on low heat till the prawns are cooked and the gravy is thick. Serve with rice, chapattis or bread.

SPICY ANGLO-INDIAN MEAT GRILL

SPICY ANGLO-INDIAN MEAT GRILL
Serves 6   Preparation Time 45 minutes
Ingredients

1 kg beef or mutton cut into fairly big pieces
2 teaspoons pepper powder
2 teaspoons chillie powder
½ teaspoon turmeric powder
2 teaspoons cumin powder
1 teaspoon garlic paste
1 teaspoon ginger paste
3 tablespoons vinegar
4 onions sliced in rounds
3 potatoes peeled and curt into halves
Salt to taste
3 tablespoons oil

Marinate the meat in vinegar, salt, pepper powder, chillie powder, ginger and garlic paste, turmeric powder, cumin powder and leave aside for about one hour. Heat some of the oil in a suitable pan or pressure cooker and add the marinated meat. Fry well till the meat becomes firm. Add the potatoes and just enough water for the meat to cook. Simmer till all the gravy dries up. Remove the meat and potatoes and keep aside. Add a little more oil in the same pressure cooker or vessel and fry the onions till brown. Add the cooked meat and potatoes and mix well. Simmer for about 5 more minutes then take down. Serve with Bread or chapattis.

PORK DEVIL FRY

Pork is every one's favourite meat. Here is an easy recipe for Spicy Pork Devil Fry
Serves 6      Preparation Time 45 minutes
Ingredients
1 kg Pork (less fat) cut into medium size pieces
2 tablespoons vinegar
1 tablespoon Worcester sauce or Soya Sauce
2 tablespoons Tomato sauce
3 tablespoons oil
3 large onions sliced
2 tablespoons chopped garlic
2 tablespoons chopped ginger
8 to 10 Curry Leaves
1 tablespoon sugar
1 teaspoon fenugreek seeds powder (Methi)
1 teaspoon mustard powder or paste
2 pieces cinnamon
3 cloves
3 teaspoons chillie powder
1 teaspoon turmeric powder
Salt to taste
3 tablespoons oil

Marinate the pork with the Vinegar, Worcester / Soya Sauce, Tomato Sauce, sugar and salt for about 1 hour. Heat oil in a pan and sauté the onions, curry leaves, chopped ginger, chopped garlic, cinnamon and cloves till light brown. Add the marinated pork, chillie powder, turmeric powder, fenugreek powder, mustard and mix well. Simmer for a few minutes till the meat becomes firm. Add sufficient water and cook for about 15 to 20 minutes till the pork is cooked. Simmer on low heat till the gravy dries up and the dish is semi dry. Serve as a side dish with Rice, Bread or Chapattis.
