PLANTAIN
FRITTERS

Ingredients
1
cup plain flour / maida
½
cup rice flour (optional)
2
tablespoons sugar
3
ripe Plantains preferably the long ripe yellow skin variety with a few spots
(not the Kerala Bananas)
1
cup milk
A
pinch of salt
½
cup water
½
teaspoon vanilla essence
Oil
for frying
Mash
the plantains and mix it with all the above ingredients to get a smooth thick
batter without lumps. Heat oil in a deep pan till smoky. Drop tablespoons of the
batter one at a time into the hot oil.
Fry till golden brown. Serve as a tea time treat or as a Dessert with Ice
Cream and Chocolate Cake
